{"id":1699026,"date":"2023-05-02T06:00:00","date_gmt":"2023-05-02T06:00:00","guid":{"rendered":"https:\/\/www.myzen.tv\/?p=1699026"},"modified":"2023-05-03T07:04:53","modified_gmt":"2023-05-03T07:04:53","slug":"croquignoles-descargots-de-rosa-et-alain","status":"publish","type":"post","link":"https:\/\/www.myzen.tv\/fr\/croquignoles-descargots-de-rosa-et-alain\/","title":{"rendered":"Croquignoles d&rsquo;escargots de Rosa et Alain"},"content":{"rendered":"\n<p>Nous allons aujourd&rsquo;hui cuisiner des <strong>croquignoles d&rsquo;escargots<\/strong>.<\/p>\n\n\n\n<p>Retrouvez cette recette de Rosa et Alain, tir\u00e9e de l&rsquo;\u00e9mission <a href=\"https:\/\/www.myzen.tv\/fr\/program\/episode\/13520-le-pays-auxerrois-s00-e01\">Carnet de Julie &#8211; Le pays Auxerrois<\/a><\/p>\n\n\n\n<p>Retrouvez l&rsquo;ensemble des recettes MyZen TV juste <a href=\"https:\/\/www.myzen.tv\/fr\/tag\/recette\/\">ici<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients pour 10 personnes :<\/h2>\n\n\n\n<ul class=\"liste-recette wp-block-list\"><li>20 douzaines d\u2019escargots frais<\/li><li>1,5 kg de pomme de terre charlotte ou nouvelles<\/li><li>2 oignons<\/li><li>30 g de beurre<\/li><li>8 cl de bourgogne blanc sec<\/li><li>2 feuilles de laurier<\/li><li>1 brin de thym<\/li><li>1 petit brin de romarin<\/li><li>4 feuilles de sauge<\/li><li>150 g de farine<\/li><li>2 oignons<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Pour la farce :<\/h3>\n\n\n\n<ul class=\"liste-recette wp-block-list\"><li>1 kg de beurre<\/li><li>100 g de persil<\/li><li>15 gousses d\u2019ail<\/li><li>1 \u00e9chalote<\/li><li>8 noisettes torr\u00e9fi\u00e9es<\/li><li>100 g de pain de campagne rassis lait<\/li><li>1 trait de cognac<\/li><li>1 trait d\u2019anisette<\/li><li>22 g de sel<\/li><li>7 g de poivre<\/li><li>Facultatif : 1 kg de girolles<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">La pr\u00e9paration : <\/h2>\n\n\n\n<ul class=\"tache-recette wp-block-list\"><li>Faites jeuner les escargots 15 jours et faites-les d\u00e9gorger dans de l\u2019eau froide. Plongez les dans une casserole d\u2019eau froide, laissez cuire 5 minutes, \u00e9gouttez, d\u00e9coquillez-les et retirez la membrane non-comestible. Faites-les cuire dans un court bouillon bien parfum\u00e9 (sans vin blanc, puisuq&rsquo;il ralentit la cuisson) et \u00e9gouttez \u00e0 nouveau. Lavez soigneusement les coquilles, s\u00e9parez le boyau de la chair et jetez les boyaux.<\/li><li>Pelez et \u00e9mincez les oignons, faites-les fondre doucement dans une cocotte avec le beurre sans coloration. Pelez et coupez les pommes de terre en rondelles de 0,5 cm d\u2019\u00e9paisseur environ. Ajoutez-les dans la cocotte, salez et poivrez, remuez, couvrez et laissez cuire au 3\/4 de leur cuisson (20 minutes environ).<\/li><li>Pendant ce temps, nettoyez les girolles et faites-les cuire 5 minutes \u00e0 feu vif avec un peu de sel dans une cocotte \u00e0 couvert pour les pr\u00e9cuire. \u00c9gouttez-les.<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Pr\u00e9paration de la farce : <\/h3>\n\n\n\n<ul class=\"tache-recette wp-block-list\"><li>Il est temps de pr\u00e9parer la farce : faites tremper le pain dans du lait. Laissez le beurre revenir \u00e0 temp\u00e9rature ambiante. Au robot, hachez ensemble persil, ail, \u00e9chalote et noisettes. Salez, poivrez. Hachez tr\u00e8s finement. Ajoutez ce m\u00e9lange au beurre pommade, rajoutez les alcools et m\u00e9langez bien le tout.<\/li><li>D\u00e9posez un peu de farce dans une coquille (avec le doigt, comme Rosa), enfoncez un escargot et recouvrez avec un autre petit morceau de farce. Terminez jusqu\u2019\u00e0 \u00e9puisement des ingr\u00e9dients.<br>Si vous utilisez les girolles, nettoyez-les, coupez les plus grosses et jetez-les dans une casserole \u00e0 moiti\u00e9 remplie d\u2019eau bouillante sal\u00e9e. D\u00e8s que l\u2019\u00e9bullition reprend, \u00e9gouttez- les.<\/li><li>Pr\u00e9chauffez le four \u00e0 170\u00b0. Retirez 2\/3 des pommes de terre de la cocotte. Sur les pommes de terre restantes, r\u00e9partissez 1\/3 des girolles puis 1\/4 des escargots, ouverture vers le haut. Recommencez en proc\u00e9dant par couches et terminez par une couche d\u2019escargots. D\u00e9posez les herbes, arrosez de vin, poivrez bien.<\/li><li>R\u00e9alisez la p\u00e2te en m\u00e9langeant la farine avec un peu d\u2019eau. Elle doit \u00eatre souple sans \u00eatre collante. D\u00e9posez-la en cordon sur le bord du couvercle. Fermez la cocotte et souder les bords avec la p\u00e2te. Enfournez et laissez cuire 1h 30. Servez sans attendre. Ce plat ne supporte pas d\u2019attendre ni d\u2019\u00eatre r\u00e9chauff\u00e9.<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Conseils de Julie :<\/strong><\/h3>\n\n\n\n<p>Entreposez le beurre parfum\u00e9 au frais 30 minutes au moins avant de farcir les escargots, il sera plus facile \u00e0 manipuler. Egalement, \u00e0 l\u2019occasion d&rsquo;une rencontre, Julie a pu apprendre que les escargots de bourgogne frais ne se r\u00e9coltent pas et donc ne se vendent que de juillet \u00e0 septembre.
