Pr\u00e9levez une branche de chaque vari\u00e9t\u00e9, effeuillez-les, hachez les feuilles et m\u00e9langez-les avec l\u2019huile d\u2019olive. Salez et poivrez. Mettez le reste des feuilles dans le four. Laissez s\u00e9cher pendant 10 minutes \u00e0 100\u00b0C.<\/li><li>D\u00e9coupez le lard en gros lardons d\u2019environ 2 cm d&rsquo;\u00e9paisseur et ins\u00e9rez-les dans le poulet, ajoutez le fromage aux herbes puis incorporez les herbes s\u00e9ch\u00e9es et l&rsquo;ail \u00e0 l&rsquo;int\u00e9rieur du poulet.<\/li><li>Assaisonnez la poularde avec du sel et du poivre. Badigeonnez-la d&rsquo;huile d&rsquo;olive aux herbes \u00e0 l&rsquo;aide d&rsquo;un pinceau.<\/li><li>Faites cuire \u00e0 la broche pendant 2 h \u00e0 2 h 30, en d\u00e9marrant le four \u00e0 froid et en r\u00e9glant la temp\u00e9rature \u00e0 175\u00b0C.
