Une pr\u00e9paration id\u00e9ale pour <strong>10 personnes<\/strong>. <\/p>\n\n\n\n<p>Retrouvez l&rsquo;ensemble de nos recettes juste <a href=\"https:\/\/www.myzen.tv\/fr\/tag\/recette\/\">ici<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients :&nbsp;<\/h2>\n\n\n\n<ul class=\"liste-recette wp-block-list\"><li>2,5 kg de saut\u00e9 de veau de race bazadaise<\/li><li>300 g de poitrine sal\u00e9e et s\u00e9ch\u00e9e &nbsp;<\/li><li>6 carottes (environ 800 g)&nbsp;<\/li><li>2 branches de thym<\/li><li>2 feuilles de laurier<\/li><li>1 branche de romarin<\/li><li>40 g de beurre<\/li><li>2 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive&nbsp;<\/li><li>3 oignons&nbsp;<\/li><li>4 gousses d\u2019ail&nbsp;<\/li><li>1 bouteille de vin blanc de graves&nbsp;<\/li><li>30 cl de bouillon de volaille&nbsp;<\/li><li>Persil&nbsp;<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">La pr\u00e9paration :<\/h2>\n\n\n\n<ul class=\"tache-recette wp-block-list\"><li>Faites chauffer le beurre et l\u2019huile dans une cocotte. Faites rissoler la viande dans une grande cocotte, en plusieurs fois si pour que les morceaux ne se superposent pas.&nbsp;&nbsp;<\/li><li>Pendant ce temps, pelez et \u00e9mincez les oignons. Coupez la poitrine en petits d\u00e9s. R\u00e9servez la viande et remplacez-la par le m\u00e9lange oignons-lardons. Laissez fondre le temps de peler et \u00e9mincer les carottes. Ajoutez les carottes dans la cocotte, l\u2019ail pel\u00e9 et coup\u00e9 en 4, le vin et remuez bien. Portez \u00e0 \u00e9bullition et laissez bouillir 5 minutes (pour \u00f4ter une bonne partie de l\u2019alcool). Ajoutez la viande, enfoncez-la bien dans la garniture, salez, poivrez et rajoutez du bouillon de volaille pour que la viande soit couverte au 3\/4. Ajoutez les herbes, posez le couvercle en laissant un petit entreb\u00e2illement et laissez cuire 2 h \u00e0 2 h 30 \u00e0 feu doux (ou au four \u00e0 160\u00b0). Pour tester la cuisson : un couteau doit s\u2019enfoncer dans la viande sans probl\u00e8me. Saupoudrez de persil avant de servir.&nbsp;<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Conseils de Julie :<\/strong>&nbsp;<\/h3>\n\n\n\n<p>Je vous conseille un m\u00e9lange de sous noix et de flanchet pour un saut\u00e9 de veau tendre et savoureux.
