Une pr\u00e9paration id\u00e9ale pour 10 personnes.<\/p>\n\n\n\n<p>Retrouvez toutes nos recettes <a href=\"https:\/\/www.myzen.tv\/fr\/tag\/recette\/\" target=\"_blank\" rel=\"noreferrer noopener\">ici<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" style=\"font-size:26px\">Les ingr\u00e9dients :<\/h2>\n\n\n\n<ul class=\"liste-recette wp-block-list\"><li>3,5 kg d\u2019\u00e9crevisses vivantes<\/li><li>300 g d\u2019amandes<\/li><li>1\/2 cuill\u00e8re \u00e0 caf\u00e9 de gingembre moulu<\/li><li>1 b\u00e2ton de cannelle<\/li><li>15 \u00e0 20 cl de verjus<\/li><li>30 g de beurre<\/li><li>1 bonne cuill\u00e8re \u00e0 soupe de sucre<\/li><li>Du persil<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" style=\"font-size:26px\">La pr\u00e9paration :<\/h2>\n\n\n\n<ul class=\"tache-recette wp-block-list\"><li>Ch\u00e2trez les \u00e9crevisses : pour cela, tirez sur l\u2019\u00e9caille centrale de la queue des \u00e9crevisses, le boyau va partir tout seul ! Portez une grande casserole d\u2019eau l\u00e9g\u00e8rement sal\u00e9e \u00e0 \u00e9bullition. Plongez les \u00e9crevisses et laissez cuire 2 minutes d\u00e8s la reprise de l\u2019\u00e9bullition. \u00c9gouttez (conservez un peu d\u2019eau de cuisson) et rafra\u00eechissez-les imm\u00e9diatement dans un saladier d\u2019eau glac\u00e9e. S\u00e9parez les t\u00eates des queues et videz le contenu des t\u00eates dans un plat creux. D\u00e9cortiquez les queues.<\/li><li>Mixez les amandes le plus finement possible, ajoutez le jus de t\u00eate et mixez \u00e0 nouveau. Versez ce m\u00e9lange dans une sauteuse, ajoutez le verjus, le sucre, les \u00e9pices, 2 louches de l\u2019eau de cuisson des \u00e9crevisses, salez et poivrez, et portez \u00e0 \u00e9bullition. Laissez mijoter 5 bonnes minutes sans cesser de remuer.<\/li><li>Mixez \u00e0 nouveau et incorporez le jus rendu par les \u00e9crevisses apr\u00e8s leur cuisson.
