Une pr\u00e9paration id\u00e9ale pour 4 personnes.<\/p>\n\n\n\n<p>Retrouvez toutes nos recettes <a href=\"https:\/\/www.myzen.tv\/fr\/tag\/recette\/\" target=\"_blank\" rel=\"noreferrer noopener\">ici<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" style=\"font-size:26px\">Les ingr\u00e9dients :<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">P\u00e2te sabl\u00e9e parmesan<\/h3>\n\n\n\n<ul class=\"liste-recette wp-block-list\"><li>100 g de parmesan<\/li><li>100 g de farine<\/li><li>100 g de beurre<\/li><li>1 jaune d\u2019\u0153uf<\/li><li>500 g de c\u00e8pes bien fermes<\/li><li>2 \u00e9chalions<\/li><li>2 cuill\u00e8res \u00e0 soupe de graisse de canard<\/li><li>2 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019arachide<\/li><li>50 g de jambon cru (si possible de Bigorre)<\/li><li>1 gousse d\u2019ail<\/li><li>5 brins de persil<\/li><li>4 feuilles de sauge<\/li><li>4 tranches fines de lard de Bigorre (ou autre lard bien affin\u00e9)<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" style=\"font-size:26px\">La pr\u00e9paration :<\/h2>\n\n\n\n<ul class=\"tache-recette wp-block-list\"><li>M\u00e9langez la farine, le parmesan r\u00e2p\u00e9, le beurre ramolli et le jaune d\u2019\u0153uf. Salez l\u00e9g\u00e8rement et \u00e9talez cette p\u00e2te entre deux feuilles de papier sulfuris\u00e9 avec un rouleau. Placez au frais. Pr\u00e9chauffez le four \u00e0 180\u00b0.<\/li><li>Pelez et \u00e9mincez les \u00e9chalotes. Faites-les saisir dans une po\u00eale avec 1 cuill\u00e8re \u00e0 soupe de graisse de canard et 1 cuill\u00e8re \u00e0 soupe d\u2019huile, puis baissez le feu et laissez confire 20 minutes au moins.<\/li><li>D\u00e9coupez les fonds de tarte dans la p\u00e2te mise au frais (Fr\u00e9deric fait de grands rectangles). Placez ces fonds au four bien \u00e0 plat sur du papier sulfuris\u00e9 et laissez cuire 8 minutes. Laissez refroidir.<\/li><li>Placez les tranches de lard entre deux feuilles de papier sulfuris\u00e9. Puis entre deux plaques, placez au four et laissez cuire 15 minutes. Laissez refroidir apr\u00e8s avoir retir\u00e9 les plaques.<\/li><li>Nettoyez les c\u00e8pes avec un torchon humide et grattez le pied, coupez les 2 plus beaux en deux dans la longueur et concassez les autres en morceaux. Faites sauter \u00e0 feu vif les c\u00e8pes concass\u00e9s dans une po\u00eale pendant 5 minutes.<\/li><li>Coupez l\u2019ail en rondelles pas trop fines. \u00c9gouttez les c\u00e8pes, retirez les c\u00e8pes du feu, ajoutez les \u00e9chalotes, l\u2019ail, le jambon taill\u00e9 finement, la sauge et le persil cisel\u00e9.
