Une pr\u00e9paration id\u00e9ale pour 6 personnes.<\/p>\n\n\n\n<p>Vous pouvez retrouver l&rsquo;ensemble de nos recettes <a href=\"https:\/\/www.myzen.tv\/fr\/tag\/recette\/\" target=\"_blank\" rel=\"noreferrer noopener\">ici<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" style=\"font-size:26px\">Les ingr\u00e9dients :<\/h2>\n\n\n\n<ul class=\"liste-recette wp-block-list\"><li>1 selle d&rsquo;agneau<\/li><li>500 g d&rsquo;\u00e9pinards frais<\/li><li>400 g de p\u00e2te feuillet\u00e9e<\/li><li>4 cr\u00eapes sal\u00e9es<\/li><li>40 g de pistaches<\/li><li>40 g de pignons de pain<\/li><li>100 g de s\u00e9same<\/li><li>120 g de beurre<\/li><li>Huile d&rsquo;olive<\/li><li>1\/2 ciboulette<\/li><li>4 feuilles de menthe<\/li><li>2 \u00e9chalotes<\/li><li>Cumin<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Pour le jus<\/h3>\n\n\n\n<ul class=\"liste-recette wp-block-list\"><li>1 blanc de poireau<\/li><li>1 carotte<\/li><li>2 oignons<\/li><li>1 brin de thym<\/li><li>20 g de concentr\u00e9 de tomates<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" style=\"font-size:26px\">La pr\u00e9paration :<\/h2>\n\n\n\n<ul class=\"tache-recette wp-block-list\"><li>D\u00e9sossez la selle d&rsquo;agneau et concassez les os. \u00c9pluchez et lavez les \u00e9pinards puis faites fondre au beurre. Faites refroidir aussit\u00f4t.<\/li><li>Torr\u00e9fiez les pignons de pain et les pistaches. Ciselez finement la ciboulette et les feuilles de menthe. Hachez finement les \u00e9pinards, pignons de pain et pistache, ajoutez les herbes.<\/li><li>Saisissez l&rsquo;agneau sur chaque face et assaisonnez.&nbsp;R\u00e9servez.<\/li><li>Placez les cr\u00eapes sur une planche, \u00e9talez uniform\u00e9ment les \u00e9pinards. Posez la noisette au centre et repliez d\u00e9licatement autour. \u00c9talez la p\u00e2te feuillet\u00e9e, enveloppez la noisette. Saupoudrez de s\u00e9same. Faites cuire \u00e0 180\u00b0C pendant 15 \u00e0 20 minutes.<\/li><li><strong>Pour le jus :<\/strong> passez au four les os concass\u00e9s et faites-les dorer.<\/li><li>Pendant ce temps, coupez les l\u00e9gumes en brunoise. Faites revenir les l\u00e9gumes \u00e0 l&rsquo;huile d&rsquo;olive, ajoutez le concass\u00e9 de tomates.<\/li><li>Ajoutez les os et mouillez avec 1\/2 litre d&rsquo;eau. R\u00e9duisez \u00e0 feu doux pendant 1 heure. Passez au chinois. Montez au beurre.<\/li><li>Coupez la noisette en tranches \u00e9paisses et dressez.
