In this episode of Julie's Frenchy Cookbook "Fish on the menu", we discover Éric's delicious recipe for Cod steaks with chorizo.

Ingredients for 4 people:

  • 4 large cod steaks with the skin
  • 100 g chorizo
  • Chervil
  • Chives
  • Tarragon
  • 20 cl of olive oil
  • 1 dozen sundried tomato petals
  • 1/2 juice of lemon
  • Pepper

Preparation:

  • For the sauce: dice the tomatoes, chop the herbs, add the olive oil and lemon juice, season with salt and pepper, stir and leave to stand (only chill if you are preparing this sauce several hours in advance).
  • Cut the chorizo into 3 to 4 cm lengths.
  • Place in the freezer for at least 30 minutes to firm up.
  • Prick them in the heart of the meat, leaving them slightly protruding.
  • Heat a frying pan over a fairly high heat, add a dash of olive oil, place the steaks skin side down and cook for 2 minutes, partially cover, lower the heat slightly and cook until the top of the meat has turned slightly white, a sign of doneness.
  • Remove the steaks from the pan, drizzle with the sauce and serve.

Julie's advice:

If you can't find French cod, use Norwegian or Icelandic cod, preferring dorsal, which is the thickest. In any case, eat it in moderation as it is an endangered species.
