E06 | Babette's Kitchen | Island fishes

In this episode, Babette de Rozières delights our taste buds with a recipe for traditionally grilled fish accompanied by two sauces: the first very "spicy", the second, softer, more suited to sensitive palates. Then, Babette makes us discover the recipe for bougna kanak, a Caledonian specialty rich in vitamins that subtly combines vegetables, roots and fish and traditionally cooked all day on a bed of stones under a blanket of banana leaves. So that we too can savor this authentic dish as colorful as it is fragrant, Babette offers us its revisited version in a pot.
