Papaya is an atypical fruit that is cooked in different ways according to its color. Babette visits a market and looks for the best papayas possible. The green papaya is very firm, very heavy and is considered as a vegetable that we eat just like a cucumber, while the ripe orange papaya is for dessert. Accompanied by Cathy, Babette will show us how to make a tatin tart with papaya in dessert and a quiche with green papaya as a main dish.
