Ingredients: 15 g sugar1/4 teaspoon baking powder200 g pumpkin2 Eggs60 ml milk10 ml oil50 g rolled oats30 g roasted seeds20 g of flour1/4 teaspoon cinnamon1/2 teaspoon salt10 g margarine Preparation: Dice the pumpkin on a cutting board.In a pot, bring water to a boil. Add the pumpkin cubes and a pinch of salt. Cook for about 25 minutes or until tender.In a frying pan, toast the pumpkin seeds until golden brown. Remove and set aside.In the same pan, lightly toast the oats. Set aside.Drain the cooked pumpkin cubes and transfer them to a bowl. Blend until smooth.Add the toasted seeds, oats, and a splash of milk to the blended pumpkin.Stir in ½ teaspoon of salt, 2 spoonfuls each of flour and sugar, a drizzle of oil, an egg, and cinnamon. Mix until well combined.Gradually add in the remaining flour and blend until the mixture is smooth.Grease your muffin tin or baking dish and pour in the mixture.Bake in a preheated oven at 180°C (350°F) for 25 minutes or until a toothpick inserted in the center comes out clean.
