Today we are going to cook a dish that is easy to reproduce at home. It is tagliatelle with tomato sauce and meatballs. The meat can be replaced by vegan meatballs made of tofu or red beans, for example.

  • Tagliatelle pasta
  • 100g of minced meat
  • 1 egg
  • 1 onion
  • 2 cloves of garlic
  • 1 pepper
  • 2 tomatoes
  • Salt
  • Pepper
  • Thyme
  • 1 celeriac
  • 120 ml tomato juice
  • 10g parmesan cheese
  • 10 ml olive oil

The recipe

  • On a board, cut your tomatoes in 4 but not all the way through and cook them in a little water. When the tomatoes are cooked, put them in a bowl and cover them with cold water. After a few minutes, take them out of the water and finish cutting them into 4 wedges, then remove the skin and seeds.
  • In a bowl, break an egg and separate the white from the yolks. Cut the celeriac into thin strips. Finely chop an onion, a yellow pepper, the two tomatoes and the garlic cloves.
  • In another bowl, add the minced meat with salt on top, then the egg yolk and mix everything together.
  • In a saucepan, boil some water, add a pinch of salt and a drizzle of olive oil. Cook the tagliatelle for 10 minutes.
  • In the meantime, shape the minced meat into small meatballs. In a frying pan, add a little olive oil and cook the meatballs.
  • In a second pan, add a dash of olive oil, the garlic, onion and celery. Then add the pepper, tomatoes, meatballs and tomato juice. Season with salt and then add the tagliatelle. Grate the Parmesan cheese.
  • Arrange the tagliatelle and meatballs on a plate, then add the parmesan and a basil leaf.
