Today we meet to prepare Chantal’s rooster with beer for 8 people.

Ingredients (for 8 people)

  • 1 rooster of 2.5 kg cut into pieces
  • 1.5 liters of dark beer
  • 3 to 4 onions according to size
  • 1 clove of garlic
  • 2 tablespoons of flour
  • 300 g of gingerbread
  • 250 g smoked bacon, cut into lardons
  • Salt
  • Pepper
  • 2 tablespoons of fresh cream
  • 1 bouquet garni
  • Saindoux

Preparation:

  • Preheat the oven to 200°C
  • Peel and quarter onions
  • Brown the rooster pieces in the lard.
  • Add the onions, flour and stir.
  • Then add the bacon, chopped garlic, bouquet garni, crumbled gingerbread, beer, salt and pepper. Finally, bring to the boil and cook for 2 hours in the oven.
  • Serve with boiled potatoes or fresh pasta.

Julie's advice:

Don't be afraid of the high heat of the oven, it's what will tenderise the flesh! If you don't have gingerbread, replace it with brown vergeoise. The flour can be optional if you use gingerbread in the recipe for Rooster with beer.
