Ingredients :

  • 100g of flour  
  • 4 eggs  
  • 1/4 teaspoon of turmeric  
  • 20 ml of olive oil  
  • 20g of cheese  
  • 50g of fresh cheese
  • 20g of parmesan cheese  
  • 100 ml of cream  
  • 10g of butter  
  • A pinch of salt 
  • A pinch of white pepper 


  • To cook your homemade pasta, you will need to break the eggs and separate the whites from the yolks. Add a pinch of salt to the egg yolks and mix to make a uniform dough. Place sifted flour on your table, then add the egg yolks. Knead by hand to obtain a homogeneous and compact dough in the shape of a ball. Let the dough rest for 30 minutes. 
  • Put flour on your work surface and place a piece of the dough. Sprinkle turmeric on top and knead it into the dough. Then add flour on top and roll it out with a rolling pin until you have a thin dough. Take a round cookie cutter and cut out circles.
  • Grate your cheese into a bowl. Grate your parmesan cheese into a second bowl. In a bowl add the fresh cheese, gruyere, parmesan and mix everything together.
  • Place the pasta rounds on a surface. Add a teaspoon of your preparation in the center. To form the tortellini, glue the sides of one diagonal to another and then form a triangle and glue the two points of the triangle together. 
  • Boil water, add salt and oil, add the Tortellini and cook for 4 minutes. Drain them and put them in a bowl and add a little olive oil. In a frying pan, heat cream over medium heat, add salt and pepper and cheese. Remove from heat when sauce begins to thicken.
  • For the presentation, put the sauce, then the tortellini and add Gruyere and Parmesan cheese on top.
