Rigatoni is a pasta in the shape of grooved tubes, very popular in central and southern Italy. It's the perfect pasta to cook with sauce !

So, let's cook an easy to reproduce and delicious recipe : Neapolitan Rigatoni !

  • 60g of rigatoni pasta
  • 50g of sausage
  • 4 black olives
  • 1 onion
  • 1 can of miniature corn
  • 1 pepper
  • 30 ml tomato sauce
  • 30 ml of stock
  • Basil
  • Salt
  • Black pepper
  • 10 ml olive oil
  • 20g of parmesan cheese


  • With a pestle, crush the black pepper, salt, garlic and a piece of chilli in a mortar. Then chop an onion. Cut the baby corn into small pieces, the peppers into cubes, the olives into rings, the sausage into pieces and chop the basil.
  • Bring water to the boil in a saucepan. When the water boils, add salt and olive oil to the water. Pour in the pasta and cook for 10 minutes.
  • Grate the Parmesan cheese into a bowl
  • In a frying pan, fry the onions with olive oil, then add the peppers, baby corn, pieces of sausage and olives. Add the basil and salt, pour in the tomato sauce and mix everything together. Add a few tablespoons of the pasta water. Add the pasta with the sauce and the parmesan and mix everything together.
  • Arrange the pasta on a plate and sprinkle with parmesan and fresh basil leaves.
