In this generous and tasty recipe we will cook a quick and easy dish. We are going to taste pappardelle with tomato pesto and mozzarella. Pappardelle are pasta, a little larger than fettuccine.

Ingredients :

  • 60g pappardelle pasta
  • 10g sun-dried tomatoes
  • 30g mozzarella cheese
  • 25g tomato pesto
  • 100g peeled tomatoes
  • 30g anchovies
  • 2 cloves of garlic
  • basil
  • 5g walnuts
  • 10g of parmesan cheese
  • 10ml olive oil
  • Oregano

The recipe

  • In a grinder we crush the two cloves of garlic, the oregano and the nuts. On a board, finely chop the dried tomatoes and the anchovies. Then cut up the peeled tomatoes. Grate the Parmesan cheese into a bowl for the rest of the recipe.
  • In a saucepan, boil some water, add a pinch of salt and a dash of olive oil. When the water boils, add the pappardelle pasta. Once cooked, remove from heat and drain.
  • In a frying pan, add olive oil. Then add the anchovies, tomatoes, tomato pesto, garlic, sundried tomatoes and tomato juice to obtain a consistent mixture. Mix the food together. Then add the parmesan cheese, mix and pour the pappardelle pasta. Cut the mozzarella into pieces in a bowl.
  • For the presentation on the plate, arrange the pappardelle pasta and put the cheese on top.

Tips :

We advise you to choose a fresh mozzarella for more deliciousness and generosity. Cut into cubes, it can be melted by mixing it directly with the pasta to obtain a creamy mixture.
