Today, we're going to make a gourmet rice noodle salad called Harusame with noodles, lettuce, rocket, kale, cucumber, carrot and ham.

Ingredients:

  • 50 g funchoza noodles
  • 50 g Chuka salad
  • 1 cucumber
  • 1 carrot
  • Salt
  • 30 g ham
  • Sesame
  • 1 nori seaweed leaf
  • Lettuce leaves
  • 1 kale
  • 1 arugula

The sauce:

  • 1 teaspoon soy sauce
  • 1 teaspoon rice vinegar
  • 2 teaspoons sesame oil
  • 1/2 teaspoon sugar
  • Pepper
  • Salt
  • Sesame

Preparation:

  • Place the funchoza noodles in a bowl and add water on top.
  • In a bowl, remove the leaves from the kale, add boiling water to the top and mix well.
  • On a board, cut the ham into bacon shapes, slice the cucumber and grate the carrot.
  • In a frying pan, drizzle the sesame oil over the ham and carrot, then stir and season with salt. Add the funchoza noodles and add a little water on top and toss again.
  • To prepare the sauce, take a bowl, add a dash of sesame oil, then soy sauce, sesame seeds and finally a dash of rice vinegar. Then add a pinch of pepper and a spoonful of sugar. Mix well.
  • In a bowl, remove the leaves from the chuka lettuce, lettuce leaf and rocket, and add the chopped nori seaweed. Add the chopped cucumbers and pour over the dressing, mixing well. Then add the pan-fried carrot and noodles and mix again.
  • Arrange the Harusame salad on a plate and add the micro sprouts and sesame seeds.
