The ravioli dough :

  • 100g of flour
  • Eggs
  • Salt

The stuffing :

  • 70g ricotta
  • 20g sun-dried tomatoes
  • Parsley
  • 1 onion
  • 20g bacon
  • Salt
  • Pepper
  • Thyme
  • 100ml cream
  • 15g of parmesan

Our recipe :

  • For the homemade dough, in a bowl, break the eggs, separating the white from the yolks. Add a pinch of salt, mix the egg yolks. On the work surface, sift the flour and make a well and add the egg yolks little by little. Mix until you get a smooth paste. Cut out pieces and flatten them with a rolling pin until it is thin.
  • In a bowl, grate the parmesan. On a board, finely chop the onion then slice the bacon, sun-dried tomatoes and parsley. In a bowl, put the dried tomatoes and chopped parsley. Add the ricotta, salt and mix.
  • In a frying pan pour a drizzle of oil, add the onion, then the bacon. After a few minutes add the cream and parmesan then season with salt and pepper. Remove from the heat when the cream is ready.
  • In a small container separate the yolk and white of an egg. Cut a piece of your dough into the shape of a rectangle. Arrange teaspoons of the mixture with ricotta. Put egg white around the ricotta then fold the dough. And press to form the ravioli.
  • In a saucepan with boiling water, add oil and a pinch of salt. Then plunge the ravioli into the water. Once cooked remove them from the water and add them to the pan with the cream. Finally, on a plate, arrange the ravioli with the cream and add parmesan on top.
